Listen: Karen Holmes of Karen’s Bakery & Cafe in Folsom creatively pivots to deal with the challenges of the Coronavirus
The small team of this popular, 21-year Folsom establishment is introducing many creative ways to help the local community and keep the business running during the health crisis.
Karen is selling food staples that are scarce in local markets — including dairy products, eggs, chicken, and produce. The local community was quick to react, ordering curbside pick up and requesting new hard-to-find items such as yeast and flour, which Karen is making available this week. She’s also selling packaged salmon from local Sunh Fish Co.
- Karen quickly met the directives facing restaurants by thinking outside the box—and offering comfort foods with curbside service and delivery: hot entrees, sandwiches, salads and baked goods. Again, the community is responding positively, ordering meals, boxes of pastries and cakes to go.
